Abstract
The present invention relates to a process for production of a double-coated lactic acid bacteria culture powders using protein and polysaccharide. The present invention can provide double-coated lactic acid bacteria through homogenization in the state of an aqueous solution and lyophilization process thereby requiring no additional equipment and apparatus. The double-coated lactic acid bacteria powders according to the present invention show improved heat-resistance, acid-resistance, bile-resistance and storage stability, as well as excellent survival rate until reaching the intestines.
