Abstract
PROBLEM TO BE SOLVED: To provide a method for lyophilizing a material containing unfreezable protein, and to provide the lyophilized product.
SOLUTION: This method is to lyophilize the material containing the unfreezable protein. Because the lyophilized product is obtained by using the unfreezable protein and by lyophilization treatment, the product keeps color, flavor, nutriments or physiologically active components of the material after the material is lyophilized, prevents decrease in bulkiness caused by the lyophilization, and further, deterioration of quality, collapse of shape, moisture absorption, or the like, are inhibited. The dried material having activity of the unfreezable protein includes food, plants, pharmaceuticals, proteins, and cells. Therefore, the method is applicable not only to a field of the food but also to various fields where biochemical and medical significances exist, such as fields of therapeutic and supplementary therapeutic agents.
